Chicken Bone Broth Soup
A nourishing and flavorful soup made from a hearty bone broth infused with the goodness of chicken, vegetables, and aromatic spices.
Ingredients:
- 1 whole chicken, organic
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 8 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and minced garlic, saut until softened
Place whole chicken in the pot, add water, carrots, celery, salt, black pepper, thyme, and bay leaf
Bring to a boil, then reduce heat and simmer for 2 hours, skimming off any foam that rises to the surface
Remove the chicken, shred the meat, and return it to the pot
Simmer for an additional 30 minutes to let the flavors meld
Adjust seasoning to taste
Serve hot, garnished with fresh herbs if desired
