Fire Grilled Tomato and Red Pepper Salsa



The charred tomatoes, red peppers, and jalapeos in this fire-grilled salsa give it a smoky flavor that goes well with the fresh cilantro and lime juice.

Ingredients:

  • 4 large tomatoes, halved
  • 2 red bell peppers, halved and deseeded
  • 1 small red onion, peeled and halved
  • 2 cloves garlic, peeled
  • 1 jalapeo pepper, halved and deseeded
  • 1/4 cup fresh cilantro leaves, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

Preheat grill to medium-high heat

Brush tomatoes, red peppers, onion, garlic, and jalapeo with olive oil

Grill vegetables until charred and softened, about 8-10 minutes

Remove vegetables from grill and let cool slightly

Chop grilled vegetables into small pieces and transfer to a bowl

Add cilantro, lime juice, salt, and pepper to the bowl and mix well

Adjust seasoning according to taste

Serve immediately or refrigerate until ready to use
