Slow Cooker Greek Pot Roast
Mediterranean flavors like garlic, oregano, and lemon are mixed into this Slow Cooker Greek Pot Roast to make a tender and flavorful dish that's great for a cozy dinner. Because it is cooked slowly, the beef gets very tender, and the herbs and olives give the dish more depth and richness.
Ingredients:
- 3 lbs beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
- 1 lemon, sliced
- 1/2 cup Kalamata olives, pitted
Instructions:
Put the beef broth, red wine vinegar, olive oil, tomato paste, oregano, thyme, rosemary, salt, and pepper in a slow cooker
Add the onion and garlic
Mix the ingredients together and then add the beef chuck roast
Turn the roast to cover it with the sauce
Olives and lemon slices on top of the roast
Put the lid on top and set the heat to low
Cook for 8 hours, or until the beef is soft and can be easily shred with a fork
Pour the cooking juices over the Greek pot roast before serving
