Almond Poppy Seed Muffins



These Almond Poppy Seed Muffins are a delightful treat with a perfect balance of almond flavor and crunch from poppy seeds. They are great for breakfast or as a snack with your favorite beverage.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tablespoons poppy seeds
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup sour cream
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sliced almonds for topping

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a mixing bowl, combine the flour, sugar, poppy seeds, baking powder, baking soda, and salt

In another bowl, whisk together the melted butter, sour cream, eggs, almond extract, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Divide the batter evenly among the muffin cups

Sprinkle sliced almonds on top of each muffin

Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely
