Pot Roast with Glazed Sweet Potatoes



This savory pot roast with brown sugar glazed sweet potatoes, carrots, and onions is a hearty and comforting meal perfect for any occasion. The beef is tender and flavorful, complemented by the sweetness of the glazed vegetables. It's a simple yet impressive dish that will satisfy your family and guests.

Ingredients:

  • 3 lbs beef chuck roast
  • 4 medium sweet potatoes, peeled and cut into chunks
  • 4 large carrots, peeled and cut into chunks
  • 2 onions, sliced
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

Warm the oven up to 325F 165C

On both sides, season the chuck roast with salt and pepper

Warm up the olive oil in a big Dutch oven or roasting pan over medium-high heat

It will take about 34 minutes on each side to brown the chuck roast

Take it out of the pan and set it aside

Put the minced garlic and sliced onions in the same pan

Cook the onions until they get soft and smell good

Put the chuck roast back in the pan

Put in the soy sauce, vinegar, and beef broth

Bring to a low boil

Put the pan in a preheated oven with the lid on top

Put it in the oven for two hours

After two hours, add the carrots and sweet potatoes to the pan and arrange them around the roast

Add brown sugar to the carrots and sweet potatoes

Put the lid back on and put it back in the oven

Roast for another 45 to 60 minutes, or until the vegetables are fully cooked and the beef is tender

When the roast is done, take it out of the oven and let it rest for 10 minutes

Then, cut it into slices

Add glazed sweet potatoes, carrots, and onions to the pot roast to serve
